I need equipment specification and programming to remotely monitor 2 x 0-10v signals, and to be able to remotely adjust a simulated 10k pot which I will do manually if the 0-10V signals are outside ideal parameters. I'm thinking maybe an Arduino or Pi? it will need to connect to the internet (ideally through a SIM) and we would like to be able to graph the remote signals as well as view in real time. I'm unsure how we would do this, via a cloud service or something?
